Organic, grass-fed and nitrate free bacon can be an excellent source of protein. The one we buy comes from a local farm where the pigs are heritage and free range. This means, that just like the days of Ma & Pa Ingels, these pigs are roaming around outside, foraging on acorns, grass & bugs just like the good old days. No parasites, antibiotics or pesticides in this meat! That ups the healthy fat content of this meal and makes this bacon a healthy source of protein.

The onion, celery, peas and lettuce provide 3 servings of veggies per each 1 cup serving of soup! The water content of each of these veggies, adding into the fact that the soup in pureed with an immersion blender, means your body is able to easily digest the vitamins in the veggies as your stomach does not have to work harder to break down the food first. How’s that for getting your kiddos to eat their veggies?!

Bacon & Pea Soup
2.5 Tablespoon extra virgin olive oil
6 ounces organic, grass fed, nitrate free bacon
1 onion, chopped
1 whole bunch celery, chopped
1 pound frozen peas (2 small bags)
4 cups chopped romaine lettuce (2 heads)
3.5 cups chicken broth
salt & pepper
Heat oil in a stock pan over medium heat. Add in bacon, onion & celery. Saute for 8 minutes. Stir in peas & lettuce, 1 minute. Add broth. Bring to a boil, reduce heat to low & simmer till peas are cooked, about 5 minutes.
Using a hand held immersion blender, process until chunky smooth. Season with salt & pepper.
