A healthy option to a New England favorite

Fish and Chips are a New England staple.  Being a proud New Englander, I was determined to find a way to get my 3 kiddos to love fish and chips.  Up until this recipe they were not fans!  Not anymore!  And you’ll love it too!

Ingredients:

4 potatoes, peeled and sliced into wedges

1/4 cup olive oil plus 1 tablespoon

1/2 cup buttermilk

2 egg

2 tablespoon water

2 tablespoon dijon mustard

1 cup panko bread crumbs

1 teaspoon sea salt and pepper

5 tilapia fillets

Heat oven to 450 degrees.

Spread 1 tablespoon olive oil on a rimmed baking sheet and warm in oven for 5 minutes.

Combine sliced potatoes, 1/4 cup olive oil and salt/pepper to taste.  Place on a second baking sheet and place in oven.  Bake for 10 minutes, toss and bake for another 10 minutes till done.

In a shallow dish, pour buttermilk.  In a second shallow dish, combine egg, water and mustard.  In a third shallow dish, combine panko and salt/pepper.  Dip fish in buttermilk, then egg mixture and finally panko.  Press the panko into the fish.

Pull the rimmed heated baking sheet from oven.  Place prepared fish on sheet and place in oven.  Cook 10 minutes.

Serve hot!
