I love a packed salad. My problem with most salads is that they leave me wanting more an hour later. This salad, which makes the most of fall flavors, will keep you feeling full without wanting more.
2 large carrots, peeled and chopped
4 ribs of celery, chopped
2 sweet potatoes, diced
3 cloves garlic, minced
2 tart red apples, diced
10 brussel sprouts, trimmed and shredded
2 tablespoon olive oil
1 teaspoon sea salt
freshly ground pepper
1/2 cup apple cider
1 teaspoon dried basil
1 teaspoon dried parsley
3 chicken breasts (cooked and prepped from Wednesday)
5 cups mixed greens
Heat olive oil in a sauté pan over medium heat.
Add all veggies and garlic and cook till soft, approx. 5 minutes.
Add apples and cook, stirring frequently.
Add spices, salt, chicken and cider. Let simmer till cider is absorbed. 10 – 20 minutes.
Serve over mixed greens.
