Tuscan Hummus


1 head of garlic, roasted (cut top off of garlic, place in aluminum foil and drizzle with olive oil – seal and bake in a 300degree oven for 15 minutes)

1 & 1/2 cup cooked chickpeas

1 & 1/2 cup cooked cannellini beans

1 teaspoon onion powder

1 teaspoon oregano

1 teaspoon thyme

pinch cumin

Juice of 1 fresh lemon

1/4 cup chopped fresh cilantro

1/4 cup chopped fresh basil

1/4 cup extra virgin olive oil

sea salt and pepper to taste

Combine all ingredients (squeeze roasted garlic out of garlic bulb directly into food processor) in a food processor.  Pulse till combined and at a consistency you like.  You may need to add more olive oil.  Taste for seasoning.
