Tuscan Bean Pasta with Spinach

This is the perfect meal for a Monday night, back to the grind.  The kids love it because its pasta and you’ll love it because it comes together in under 30 minutes!

Tuscan Bean Pasta with Spinach

Ingredients:

2 cups or cans cannellini beans

5 cloves garlic, minced

1/4 cup olive oil

1 tablespoon dried rosemary

1 tablespoon dried oregano

1 tablespoon dried parsley

1/4 cup dry white wine

1/2 cup organic chicken broth

2 cups packed fresh spinach

1 package quinoa pasta

sea salt and pepper to taste

parmesan cheese to taste

Heat olive oil over medium heat in a saute pan.  Add garlic.  Cook for 1 minute.  Add beans and herbs. Cook for 5 minutes.

Add wine.  Cook for 1 minute.

Add chicken broth and simmer for 3 minutes.

Add spinach till wilted.  Season with salt and pepper to taste.

Cook pasta according to package.

Combine pasta and beans with spinach.

Serve with parmesan cheese.
