Chile Lime Chicken

I’ve been told by a loving friend that this is a delicious easy recipe!  I like that I can make it and forget it.  Just pop it in the oven and let it do its thing.

I like to serve it with baked potatoes and steamed broccoli.  I always make extra, this way I have roasted chicken, baked potatoes and broccoli for easy lunches throughout the week.

Chile Lime Chicken


2 tablespoon butter (room temp)

1/4 cup & 2 tablespoon chili powder

2 tablespoon & 1/4cup lime juice

1 whole chicken (4.5 – 5 pounds)

1.5 teaspoon salt

1 beer

Set oven to 350 degrees

In a small bowl rub together butter and 2 tablespoon chili powder.  Using fingers loosen skin from the chicken, rub chili butter under skin.  Rub remaining chili powder, salt and 2 tablespoon lime juice over chicken.

Pour beer and 1/4 cup lime juice in the bottom of the roasting pan.  Place the chicken on a roasting rack and tuck wings behind its back.  Bake for 1hour 35 minutes or until thighs registers 170 degrees.
