Say Good-bye to Boring Salads

Not Your Average Salad


This is the perfect salad for a picnic, bar-b-que or party. Eat it now or save it for later. And yes, my kiddos loved it. (Just put the dressing on the side if your kiddos aren’t fans of “stuff” on their salad like mine.)


1 cup edamame, cooked and shelled

1 cup barley, cooked and shelled

1 bunch green onions, chopped

1 large carrot, chopped

1 cucumber, chopped

1 red bell pepper, chopped

2 stalks celery, chopped

1/2 cup fresh basil, chopped


1/4 teaspoon dry mustard

1/2 cup plain yogurt

1 freshly squeezed lime

1/4 cup fresh basil, chopped

1/2 cup rice wine vinegar

3 cloves garlic, minced

Sea Salt and pepper to taste

Combine and serve with dressing. Sea Salt and pepper to taste.
