A New Twist to Your Favorite Meatloaf

Just because you’re eating healthy doesn’t mean you have to forgo the foods you love. Just tweak them a little! 

Well here’s my killer meatloaf recipe which is super easy, super yummy and full of veggies! Yay for one pan cooking too! Let the oven do all the work! 


Jocelyn’s veggie and beef Meatloaf

1 pound lean ground beef
1 cup cooked brown rice
1 egg
3/4 cup shredded Parmesan cheese
1 onion, diced
1 bell pepper, diced
2 stalks celery, diced
1 tablespoon soy sauce or tamari
1 teaspoon sea salt
Fresh ground pepper to taste
1 tablespoon dried oregano
1 tablespoon dried basil

Olive oil to coat aluminum foil

Preheat oven to 350 degrees

Combine all ingredients in a large bowl.

Place a piece of aluminum foil on a baking sheet, coat with olive oil.

Place ingredients on foil and shape into a loaf.

Bake for 1 hour. Remove from oven and let sit for 10 minutes before serving.
