A New Twist on Tabbouleh Salad

I love recipes that come together in under 20 minutes! And ones that have my kids calling me “the best cook ever!”

Updated Tabbouleh Salad

8 ounces quinoa pasta or 1 cup quinoa, cooked according to package

1/2 cup edamame, cooked & shelled

1 fresh tomato, diced

1/2 cucumber, diced

1 Tablespoon fresh lime juice

1 Tablespoon fresh lemon juice

1 Tablespoon tamari or low sodium soy sauce

1/2 teaspoon dried thyme

1/2 teaspoon dried parsley

1/2 teaspoon onion powder

Add freshly ground pepper to taste

Combine!

It’s that simple! The edamame and quinoa add a protein punch without leaving you feeling heavy. The tomato and cucumber add a freshness. And the dressing is a savory twist for your taste buds!

It can even be made ahead and chilled for a meal ready to eat!
